On a more interesting note, I'm in South Bend, IN, visiting the beautiful and talented Leslie, who happens to be a vegetarian and aspiring health freak. I'll be here until Sunday when I'll venture back to Ohio for a trip to Cedar Point (!) with Jessica and company. We're cooking in as much as possible to save on money and yaknow, for our health. Last night we made pasta, garlic bread, and salad. I feel a little sheepish posting this pre-made sauce dinner after reading Gina's blog about homemade sauce over at Gina Is Eating.
Ours was not at all from scratch, but it was declicious and plated up nicely next to some semi-homemade garlic bread on Leslie's ultra cute dishes.
We made a spinach salad with bell peppers, red onion, and cucumber. Topped with balsamic vinagrette, it was both pretty and yummy.
Now I'm off to get ready to be Leslie's date to a wedding at Notre Dame. I have no idea who the bride and groom are, but it should be cool to see a wedding in the big/fancy/scary/catholic cathedral. I was confused about why the wedding is at 1:00 on a Friday, but apparantly if you want to get married at ND, you have to book years in advance and take whatever slot they give you. I think this would make for cool wedding planning. Oh, our wedding is at 8:30 am on a Tuesday? Breakfast buffet!
Now, a request. Any suggestions about what to eat at a theme park such as Cedar Point?
