Mixed Bean Salad, Non-veg love.

With the ninety-something-kill-me-in-the-face weather we've been having and the fact that my kitchen is the furthest point from my window AC unit, I worry about summer cooking. I've been making lots of salads. This is a bean salad, and even BDC, who hates beans, likes it. So if you like beans, well, you'll love this.


Colorful and Healthy


You probably don't need a recipe for this, but I'll give you what i did anyway. The process was similar to what I do to make pasta salad.

10 Bean Salad
Soak 1 cup dried mixed beans in 4 cups cold water. Leave them sit for a day. Or like 6 hours. Rinse.
Boil beans until they reach an edible texture. Strain. Cool.
Chop your veggies. I used red and green peppers, red and green onions, and tomatos.
Add 1/3 cupish italian dressing. You can be awesome and make your own, or use a non-poision kind like me.
Stir in some dijon mustard to taste.
Stir in a little honey (or agave if you don't swing that way).
S&P.
Refridgerate.
Consume.

Obviously, the recipe is flexible. It would be good with just one or two kinds of beans. I think some chopped brocolli, edamame, snow peas, etc would work. Ooh, or sundried tomatos and olives. That'd be delightful, although, that would include too many of the things-BDC-doesn't-like (On-going list: olives, tomatos [sun dried and raw], quinoa, tofu, sour creme, beans). That makes it sound like he is picky, but truly, he's not. I'm actually quite lucky. When I hear about my friends who have to fight to get their boys to try whole wheat pasta, I feel really happy that I have such an open-minded boy. He's really supportive of what I do/don't eat, and he likes to try everything I make. He's said many times now that he'd rather have my food than go out to eat, especially when going out means getting cheaply made flesh. When it comes to his mama's ho-ho cakes or taco salad though, I'm fighting 24 years of conditioning. So I don't stress that the man hasn't made the same life-changes as me. I'm just glad he supports me. I figure he'll make the switch eventually.
